Speakers: Mainey Cookson & Dee Murphy
Mainey Cookson and Dee Murphy from the Calgary Celiac Association bring both lived experience and community leadership to the stage. After navigating their own celiac diagnoses, they’ve become passionate advocates for education, support, and connection within the gluten-free community. Their session will feature an engaging, interactive presentation that challenges attendees to think differently about everyday foods and ingredients, while testing their knowledge of what is truly gluten-free. Expect a fun, approachable, and empowering session designed to build confidence in daily gluten-free living.

Shelley Case is a leading international expert on the gluten-free diet, as well as a registered dietitian, speaker, and best-selling author. Living with celiac disease herself, she offers a unique combination of professional expertise and personal understanding. In this session, Shelley will share the most up-to-date, evidence-based information on managing a gluten-free diet. Whether you are newly diagnosed or have been gluten-free for years, attendees will gain practical strategies, trusted guidance, and valuable insights to support long-term health and success.

Cinde Little, founder of Everyday Gluten Free Gourmet, is a dedicated gluten-free cooking instructor, food blogger, and health educator based in Calgary. With years of experience helping others navigate gluten-free cooking, she has become a trusted voice in the community. In her session, “Understanding Gluten Free Flour,” Cinde will simplify the often-confusing world of gluten-free baking by breaking down the roles of flours, starches, and binders. Attendees will leave with practical tips, ingredient knowledge, and the confidence to elevate their gluten-free baking at home.
