Join us throughout the day for presentations focused on celiac disease, gluten-free living, food insecurity, community and wellness.

10:15–11:00 AM — Katie Thai
Gluten-Free Food Insecurity & Community Resilience

Katie Thai is a recent graduate of the University of Alberta’s Dietetics Specialization Program, completing her studies in June 2026.

Her presentation will explore how Canadian adults with celiac disease navigate gluten-free food insecurity. While food banks can provide support, Katie’s research found that people use many other creative and resourceful strategies as well.

She’ll discuss common challenges, available community supports, government policies and, most importantly, the resilience and strong sense of community shown by people living with celiac disease as they work to access safe gluten-free food.

Celiac Disease: How Far We’ve Come

Gary was diagnosed with celiac disease in 1987 and has witnessed an incredible evolution in our understanding of the condition over the decades.

He’ll share his perspective on how celiac awareness, education and research have changed, along with the important role the Canadian Celiac Association has played in research, advocacy and education.

Gary will also speak about the work of Celiac Edmonton, which has been active since 1984, supporting local events and helping educate Edmontonians about celiac disease and gluten-free living.


12:30–1:15 PM — Stephan Wilmes, M.A. • YouInFocus
Gluten-Free and Alkaline — How a Happy Gut Equals a Long Life

Stephan Wilmes will explore how diet, stress and lifestyle may affect overall well-being, while introducing his approach to gluten-free and alkaline living.

His presentation will cover the fundamentals of metabolism, his perspective on processed foods and acidic lifestyles, and practical ways to incorporate gluten-free, alkaline-focused habits into everyday life.

Stephan is a former professional athlete, life coach and author. He is the founder of the Ayurveda Wellness Center in Munich, Germany, and his company, YouInFocus Products Corp., is the North American distributor of Dr. Jentschura’s gluten-free wellness program.

His talks bring together nutrition, lifestyle, tradition and holistic wellness in an accessible and practical way.
